This fruit cake is probably the simplest thing I’ve ever made.
The basic idea is that you soak some dried mixed fruit in fruit juice overnight, then add some flour and bake it, then while it’s still warm you wrap it in foil and put it in the fridge and the next day you have the most delicious, moist fruit cake. So simple!
It does take a little time so you have to be patient but it’s absolutely worth it in the end.
So, here’s how you do it:
You need 500g of dried mixed fruit. You can buy a bag of mixed dried fruit or get creative and make up your own mix of currants, raisins, sultanas, apricots, cranberries or even figs, as long as they’re not too large pieces. When I use apricots or figs I’ll always chop them up first. Use all the things you love!
Place your dried fruit in a bowl and add 1 cup of apple juice. I’ve also used flavoured teas, like ginger & apple and I’ve also seen examples of people using orange juice and coffee, so really the choice is yours.
Now you should cover the bowl and place it in the fridge overnight.
The next day add 1 cup of self raising flour to your bowl and mix really well. It will appear quite dry but once you start mixing, the liquid at the bottom of the bowl will soon help the mixture combine nicely.
Then place the mixture into a loaf tin or a small cake tin lined with baking paper (leave a little overhang as it makes it easier to get out). Then bake it at 175 degrees for 45-50 minutes until a skewer comes out clean.
Leave it to cool in the tin for about 10-15 minutes then while it’s still warm, wrap it in foil and refrigerate for a day before eating. Don’t skip this step… your cake will be dry if you do!
The wait is definitely worth it, the next day you’ll have a really delicious moist fruit cake.
I usually double the ingredients and make 2, I know that doesn’t surprise you! Also we definitely prefer it made with tea as it’s not so sweet as using fruit juice.
It freezes really well, you can even slice it up and keep it in the freezer, taking one piece out at a time as you need it… that definitely wouldn’t work in our house! It disappears very quickly here, The Misses love to take it to school for a recess snack and hubby usually takes a few slices to work with him to keep him going through the day. I find it impossible to resist!
I’ve shared this recipe a few times with friends and they all love it, you just need to be patient and organised. Like I said, it’s totally worth it!
