This soup is on high rotation in our house, and even more so now the evenings are getting cooler. The whole family loves it but more importantly it’s really quick and very easy to make.
There aren’t many veggies to chop, only 1 onion, and it’s made from items I usually have in my pantry so it’s always my go to when time is short or when the fridge is looking bare and I can’t (or don’t want to) go to the supermarket.
I’ve already shared this with a number of friends and they’ve all loved it and made it numerous times.
It’s another versatile recipe that you can adapt to suit you… if you add more lentils then it becomes more of a stew than a soup. I quite often add some pumpkin, which makes it sweeter and much more filling. If you don’t like spinach, it works just as well if you leave it out. If you don’t have an onion, it doesn’t matter. I also love using tinned cherry tomatoes as they hold their shape and are like little flavour bombs.
The combination of turmeric, cumin, cardamom and cinnamon is so incredibly tasty. Just don’t skip the lime juice at the end… Promise me you won’t!!
The leftovers are always even tastier and it freezes really well too, hubby regularly takes it to work for lunch.
It’s not my recipe, but I could probably make it with my eyes closed as I’ve done it so many times.
